I grew up drinking Swiss Miss Hot Chocolate. You know, the dried powder cocoa in the little white packet. Hey, I didn’t know any better. A few weeks ago, on a particular chilly night, I craved some hot chocolate. But I didn’t feel like leaving the house and Swiss Miss isn’t vegan anyway. So what’s a vegan to do?? Google, duh.

I had some cocoa powder on-hand and assumed I’d find a recipe telling me to use that as an ingredient. So imagine my surprise when I stumbled upon Buzzfeed‘s 10 Commandments of Awesome Hot Chocolate instructing me NOT to use cocoa powder. Instead, they mandated using solid chocolate. Wait, what??? No gritty texture with even more deliciousness…why didn’t I think of this??

Buzzfeed‘s recipe takes less than 5 minutes to make. Easy peasy. If you use chocolate chips instead of a chocolate bar, no need to chop. Creamy, dreamy…where has this recipe been my whole life???

With a velvety smooth texture and a rich, indulgently decadent chocolate taste, you will never, ever go back to that powdered crap again. Ever. Trust me.

Ingredients:

2 cups vanilla soy milk (almond milk or rice milk will work too)
1/2 cup vegan semi-sweet chocolate chips (I use Trader Joe’s)
2 teaspoons brown sugar
1 pinch salt

Directions:

1. In small saucepan, combine soy milk, brown sugar and salt. Stir.

2. Heat on medium heat.

3. When milk mixture starts to bubble at the edges, add chocolate chips. Stir with whisk immediately.

4. Continue stirring with whisk non-stop until chocolate melts, approximately 2 minutes.
